Tiivistelmä
Oluen tuottamisprosessi alkaa vierteen valmistuksella panimojärjestelmän säiliössä. Vierteen valmistus tapahtuu järjestelmään syötetyn reseptin mukaisesti. Valmistuksen loppuvaiheessa vierre on kiehuvan kuumaa. Keittoajan loputtua vierre on jäähdytettävä käymislämpötilaan.
Panimojärjestelmän valmistajan Speidelin käyttöohjeen mukaan olisi jääkylmää vettä jäähdytinvetenä käytettäessä vierteen lämpötila saatu 50 minuutissa laskemaan vaippajäähdyttimellä kiehuvan kuumasta 25 °C käymislämpötilaan laitteiston säiliössä. Opinnäytetyön toteutuksen perusteena oli, että käytettäessä kylmää hanavettä jäähdytysajan havaittiin pitenevän huomattavasti. Pidentynyt jäähdytysaika aiheuttaisi laitteiston käytössä kontaminaatioriskin suurenemisen jäähdytettäessä vierrettä. Vaippajäähdytyksen käyttö kylmällä hanavedellä vaikuttaisi myös merkittävästi työaikaa pidentäen.
Opinnäytetyön aikana kokeiltiin vaihtoehtoisia jäähdytystapoja käytettävissä olevilla välineillä vierteen jäähdyttämiseksi kiehuvasta 25 °C lämpötilaan. Vierrettä matkittiin jäähdyttäen sen tilalla kiehuvaa vettä. Täytettynä ylimpään merkkiin asti, oli jäähdytettävän veden määrä 230 litraa. Upotettava vierrejäähdytin sekä ulkoinen levylämmönvaihdin yhdessä vaippajäähdyttimen kanssa olivat molemmat jäähdytykseen soveltuvaksi todettuja välineitä. Ulkoista levylämmönvaihdinta ja upotettavaa jäähdytintä käytettiin erillisissä jäähdytyskokeissa.
Upotettavaa vierteenjäähdytintä käytettäessä vaippajäähdyttimen lisänä oli jäähdytysaika myös 50 minuuttia, aivan kuten valmistajan menetelmää käytettäessä.
Levylämmönvaihdinta käytettäessä vaippajäähdyttimen lisänä saatiin jäähdytettävä nestetilavuus myös siirrettyä jäähdytyksen aikana fermentoriin. Toistetuissa kokeissa myös jäähdyttämiseen samalla nestetilavuutta siirrettäessä kului 50 minuuttia. The beer making process starts with the step of producing wort in the container of the brewery system. The pertinent is entered into the system to produce the wort. At the end of the brewing process the wort is boiling hot. When the boiling time is over, the hot wort must be cooled down to a temperature suitable for fermentation.
According to the instruction manual of the brewery system manufacturer Speidel, using the cooling jacket with ice cold water would lower the temperature of the boiling wort to the fermentation temperature of 25 °C inside the container within 50 minutes.
The reason for this thesis was that it was noticed that the cooling time was considerably increased when using cold tap water. The extended cooling time of the wort would increase the risk of contamination when cooling the wort in the open container. The duration of the work would also increase considerably by using the cooling jacket with cold tap water.
Available hardware was used to test different methods for cooling the boiling wort down to the temperature of 25 °C. Instead of wort, boiling water was used. When the container was filled up to the top mark with boiling water, the volume of the water to be cooled was 230 liters.
The immersion cooler as well as the external plate heat exchanger each used in combination with the cooling jacket, were shown to accelerate the cooling of the wort. The immerse cooler and the external heat exchanger were used in separate experiments.
When using a submersible cooler combined with the jacket cooler, the cooling time was 50 minutes, similarly to the manufacturer’s method.
When using a plate heat exchanger combined with the jacket cooler, the amount of liquid to be cooled was also transferred to the fermenter during the duration of the cooling. In repeated tests the cooling while transferring the liquid also took 50 minutes to work out.
