I denna studie undersöks det specifika för den fysiska omgivningen och hur den påverkar gäster vid en restaurangupplevelse.
Avhandlingen bygger på redan befintliga teorier om olika aspekter av den fysiska omgivningen, upplevelserummet och sinnesmarknadsföring. Teorierna inkluderar Mary Jo Bitners teorier om servicescape (även Lena Mossbergs svenska teorier om upplevelserummet baserade på bland annat Bitners teorier) och Hulténs teorier om sinnesmarknadsföring.
Undersökningen består av tre intervjuer och en observation. Intervjuerna genomfördes med restaurangchefen på Indigo, Indigos senaste inredare och en fokusgrupp. En observation gjordes med fokusgruppen för att få en mer ingående analys av inredningen på restaurangen. Studiens analys jämför krögarens ideér, visionen av inredaren och fokusgruppens tolkning av deras koncept i restaurangen.
Slutsatsen är att en restaurangupplevelse påverkas av den fysiska omgivningen. Det specifika för den fysiska omgivningen på en restaurang är att förstärka restaurangupplevelsen för gästerna. Den är viktig då gästerna uppmärksammar och känner av om det finns en omtanke med inredning och atmosfären i restaurangen. Det är viktigt för krögare att arbeta för restaurangers fysiska omgivning tillsammans med en professionell inredare för att uppnå sin vision för restaurangen. This thesis is about the aspect of the physical environment in a restaurant and how it affects the customer’s experience.
This thesis is based on already existing theories about the different aspects of the physical environment, servicescape and sensory marketing. The theories include Mary Jo Bitner’s theories about the servicescape (also Lena Mossbergs swedish theories based on Bitners theories), Hulténs theories about sensory marketing.
The study itself includes three interviews and an observation. The interviews was conducted with the owner of Indigo, the interior decorator and a focus group. The observation was done with the focus group to get a more in depth analysis of the restaurant's decor. The analysis of the study is comparing the ideas of the restaurateur, the vision of the decorator and the focus groups interpretation of the restaurant concept.
The thesis conclusion is that a restaurant experience is positively affected by the physical environment and is also important since customers notice if there has been work done on the decor and atmosphere in the restaurant. It is important for restaurateurs to work on the restaurant's physical environment together with a professional decorator to reach their vision for the restaurant.
