Tiivistelmä
Opinnäytetyön tarkoituksena oli tuottaa täsmällistä tietoa erilaisten työaikamallien kustannusvaikutuksista toimeksiantajalle, joka on iso elintarvikealan yritys. Elintarviketeollisuudessa kannattavat tuotteet ovat yrityksen menestymisen elinehto. Yrityksissä tulee olla valmius tarkastella tuotteiden kannattavuutta täsmällisten lukujen valossa, jotta yritys pystyy tekemään päätöksiä niiden tulevaisuudesta ja tarjoamaan kuluttajille laadukkaita ja järkevän hintaisia tuotteita.
Täysin poikkeuksellinen maailmantilanne vaikuttaa suuresti koko elintarvikesektoriin. Kotimaista ruuantuotantoa arvostetaan suuresti ja huoltovarmuus nähdään yhteiskuntaa vakauttavana tekijänä. Kannattavuuden parantaminen läpi koko sektorin on yksi alan tärkeimmistä tulevaisuuden haasteista.
Opinnäytetyön teoriaosuudessa kartoitetaan suhdanteiden vaikutusta elintarvikealan kannattavuuteen ja kuluttajien ostokäyttäytymiseen. Kustannuslaskennan perusteiden ymmärrys oli oleellista työn onnistumisen vuoksi, tähän tutustutaan kirjallisuuden avulla. Toiminnallisessa osuudessa kehitettiin Excel-pohjainen laskentajärjestelmä, joka jakaa yrityksen kahden osaston työvoimakustannukset niiden todellisen toteuman mukaisesti. Järjestelmä tulee yrityksen valmistuspäälliköiden käyttöön budjetointityökaluksi. Järjestelmään on rakennettu korotus – vähennystyökalu, jonka avulla kustannuksia voidaan vertailla eri skenaarioilla.
Excel-järjestelmän tuloksena syntyy resurssisäästöjä budjetin laatimisen huomattavasta helpottumisesta. Järjestelmän avulla myös tuotekohtaiset kannattavuusvertailut ovat mahdollisia linjojen kapasiteettien tehostamiseksi. Työvoimakustannus tehtyä kiloa kohti vaihteli paljon riippuen linjan työaikamallista ja tehokkuudesta. Kustannussäästöjä ja tuotteiden kannattavuuden arviointia voidaan nyt kohdistaa sinne, missä syntyy isoimmat kustannukset tuotettavaa kiloa kohden. The purpose of this thesis was to provide accurate information on the cost impacts of different working time models for the client, which is a large food industry company. In the food industry, profitable products are a guarantee of the success of any company. Companies must be prepared to examine the profitability of products with precise figures so that they can make decisions about their future and offer consumers high-quality products at reasonable prices.
The completely exceptional world situation has a major impact on the entire food sector. Domestic food production is highly valued and national security of supply is seen as a stabilizing factor for society. Improving profitability throughout the sector is one of the most important future challenges for the industry.
The theoretical part of the thesis examined the impact of economic cycles on the profitability of the food industry and consumers’ purchasing behavior. Understanding the basics of cost accounting was essential for the success of the work and this was also explored through literature. In the functional part, an Excel-based calculation system was developed that distributes the labor costs of two departments of a certain enterprise according to their actual realization. This system will then be used by the company's manufacturing managers as a budgeting tool. In addition, a tool was built into the system that can be used to increase or decrease the number of costs and thus compare different scenarios.
As a result of the Excel system, resource savings could be generated by significantly facilitating the budget creation. With the help of the system, product-specific profitability comparisons were also possible to improve the efficiency of line capacities. The labor cost per kilogram varied significantly depending on the working time model and efficiency of the line. In conclusion, cost savings and the assessment of the product profitability can now be targeted at where the highest costs per kilogram are generated.
