Tiivistelmä
Opinnäytetyön tavoitteena oli selvittää suomalaisen tarjoilijan ammatin ja arvostukseen liittyviä ilmiöitä aina historiasta tähän päivään sosiokulttuurisesta näkökulmasta tarkasteltuna. Tutkimuksen tarkoituksena oli saada selville mitkä tekijät, tapahtumat tai toiminnat ovat vaikuttaneet tarjoilijan ammatin arvostukseen viimeisten 40 -vuoden aikana tarjoilijan omasta näkökulmasta. Keskeiset tutkimuskysymykset työssä olivat: millainen on tarjoilijan työ sosiokulttuurisessa ympäristössä, miten sosiokulttuurinen toiminta vaikuttaa tarjoilijan ammattiin ja arvostuksen muodostumiseen sekä mitkä ilmiöt ovat vaikuttaneet tarjoilijan ammattiin sekä arvostukseen. Tutkimus rajattiin hyvätasoiseen ruokaravintolaan, jossa on anniskeluoikeudet. Teoreettisen viitekehyksen yhteydessä syntyi historiakatsaus, jonka avulla tarkasteltiin tarjoilijan työhön vaikuttavia yhteiskunnallisia ja kulttuurillisia ilmiöitä aina 1800 -luvulta alkaen. Tutkimusote oli narratiivinen eli tutkimusmenetelmänä oli laadullinen tutkimus. Tarinoiden narratiivit muodostivat tutkimuksen aineiston. Yksilöhaastatteluun osallistui yhteensä 16 tarjoilijaa, joista seitsemän olivat Vuoden tarjoilija-kisojen voittajia. Haastattelut toteutettiin toukokuun ja syyskuun 2019 välisenä ajankohtana Turussa ja Helsingissä. Haastattelut toteutettiin kertomuksellisilla haastatteluilla eli tarjoilijat kertoivat oman tarjoilijan tarinansa. Tarjoilijan ammatin vetovoima ja arvostus eivät ole kovin korkealla ja työtä pidetään nuorten työnä sekä läpikulkuammattina. Jokaisen tarjoilijan on ensin itse arvostettava omaa ammattiaan, jotta voi ansaita muiden arvostuksen. Johtopäätöksenä voidaan sanoa, että tarjoilija toimii näyttelijänä vieraanvaraisuuden näyttämöllä, jonka käsikirjoitusta ohjailevat kulttuuri, historia ja yhteiskunta. Alkoholilla ja asenteilla on olemassa omat roolinsa tällä näyttämöllä, jotka voivat ohjata esityksen ohi käsikirjoituksen. Ammattitaito on tarjoilijan tärkein rooliasu. The aim of the thesis was to examine the phenomena related to the profession and appreciation of Finnish waiters and waitresses from a sociocultural perspective. The focus of the study was on the factors, events and actions have affected the appreciation of waiters’ profession during the past 40 years. The essential research questions were: What is waiters’ work like in a sociocultural environment? What kind of effect do sociocultural activities have on the development of waiters’ appreciation? Which phenomena have affected the waiters’ profession and appreciation? The study was limited to a fully licenced high-quality restaurant. The structuring of the theoretical framework led to a historical overview that went back to the 19th century. The social and cultural phenomena that affect waiters’ work were viewed within this historical frame.
The conducted research was narrative, and the qualitative research approach was used. The data consisted of the narratives of the stories that were told. Altogether 16 waiters were interviewed individually. Seven of them had won the Waiter of the Year competition. The interviews were carried out between May and September 2019 in Turku and Helsinki. The interviews were conducted as narrative interviews, which meant that the waiters told their own career stories.
The appeal and appreciation of waiter’s profession are not very high and it is often considered a young people’s job or just a temporary job. Every waiter must first appreciate their own profession in order to gain other people’s appreciation. In conclusion: a waiter acts as an actor or actress on the stage of hospitality. Culture, history and society are the directors. Alcohol and attitudes have their own roles on the stage, and they can lead to deviations from the script. Professional expertise is the most important costume of a waiter.
